1. Serve cheese at room temperature to appreciate its full character. Take it out of the fridge (keeping it wrapped) one hour before guests arrive.

2. As an appetizer, plan for 1 to 1 1/2 ounces of cheese per person.

3. Use a separate knife for each cheese. You don't want strong cheeses to spread their flavour to milder companions. Serve extremely strong cheese on a separate plate.
