Bartender Steve Power opened his Brimstone Public House in St. John's six months ago, naming it for Brimstone Head on nearby Fogo Island. "It's what the International Flat Earth Society considers the centre of the world," says Power, a self-described "proud Newfoundlander." Accordingly, the bar's interior is as dark as the clouds over L'Anse aux Meadows, while many of the custom cocktails have been created to reflect the regional character. Among them is the Brimstone Sapphire made with diced lime and orange - what seafaring Newfoundlanders once relied on to prevent scurvy.
To pay homage to the island's past, Power dices lime and oranges, placing them in a mixing glass with sugar and muddles them to release the oils and juices, adding coriander right at the end. He then adds the gin and fills the glass with ice, caps and shakes. The liquid is then strained into a tumbler with cracked ice and garnished with julienned lime and a coriander leaf. "It's a unique taste," Power says. "Something nice, something sweet, something warm, something a lot like Newfoundlanders themselves."
