@lmf55: Is there a way to make a healthy chowder?

Jamie Oliver: Definitely. In theory, the only thing that makes a chowder unhealthy is if you use an obscene amount of cream and butter. So, if you're making it yourself, swap the butter for olive oil or exchange double cream for just a little single cream. Yes, they do add richness, but that texture can be achieved by using beautiful root veg, then mashing a proportion of the soup so you get a silky smoothness. Paring back the butter and cream will also let the other ingredients sing – beautiful sweetcorn, lovely clams and mussels and a small amount of smoky bacon.
