Rosh Hashanah, the Jewish New Year, falls early this year, on Sept. 4. This time we will celebrate with a more summery menu, with components of sweetness to celebrate the sweetness of a new year.

Veal breast, a.k.a. veal brisket, is more readily available than ever. Very slowly cooked for a succulent texture and served with a lip-smacking sauce, this inexpensive cut also has the benefit of being tastiest when prepared ahead of time.
