Making granola bars can be a fun family activity. Kids usually like to eat things that they've helped to make. Although I love our homemade granola (recipe below), you can use your favourite recipe or any pre-bought granola for these or even whole grain cereals which have less sugar. Kids enjoy these treats in lunch boxes because they are soft and chewy and don't crumble.

Servings: Makes 8 to 16 bars depending on the size you want.

Ingredients

2 tablespoons vegetable oil

2 cups miniature marshmallows

4 cups homemade granola

Method

Oil an 8 x 8-inch or similar sized pan and line the bottom with parchment paper. Set aside.

Heat vegetable oil in a pot over medium heat. Add miniature marshmallows and stir for 2 minutes or until melted. Add granola and stir until well coated. Scrape into prepared pan and use an oiled spatula or your hand to pack it tightly. Let set until firm. Cut into bars.
