Ingredients

11/2 lb red potatoes, unpeeled

1 cup hot milk

Salt and freshly ground pepper

1/4 cup chopped chives

Method

Cut the potatoes into quarters or halves depending on size. Place in cold, salted water and bring to boil. Boil for 12 to 15 minutes until fork tender. Drain well and return to warm pot. Place over turned off burner to dry out potatoes.

Mash potatoes, adding milk slowly until potatoes are chunky and creamy. Season well with salt and pepper and stir in chives.
