Answer: Squash is more of a summer veg, but it can be stored for so long it's become a bit of a winter imposter. Something that all my family love, which uses fresh or frozen veg, or even a mixture of the two, is good old minestrone. It's just a stone's throw from a stew and really versatile. Pick up a great value ham hock from the butchers – you only need one to create incredible-tasting broth. Start by sweating chopped carrot, celery and onion, then add the hock, cover with water, and simmer until delicious and tender. Towards the end, add any frozen or fresh seasonal veg, like chard or cavolo nero, and let it cook through. Of course, you can give it an Italian vibe with odds and ends of pasta, lentils or rice, tear in chunks of stale bread like a ribollita, or even include a few small dumplings. And if you can, introduce a few dried mushrooms into the story; you'll gain a wonderful savouriness every time.
