Maybe you've had rhubarb desserts, but have you tried it as a side dish? This simple roasted rhubarb is a delicious surprise with duck or chicken.
Servings: Four
Ingredients
4 long stems of rhubarb, cut into fingers (and split lengthwise if they’re very thick)
1/3 cup sugar
freshly ground pepper, to taste
1 tbsp chopped rosemary leaves
Method
Preheat oven to 375 F. Arrange rhubarb pieces in a shallow baking dish and sprinkle with sugar. Cover with foil and roast on lower rack of oven for 12 to 15 minutes, checking once to make sure sugar is melting evenly and not getting too brown. (Use a spoon to redistribute liquid if necessary.)
Transfer rhubarb to a serving dish and season with freshly ground pepper and chopped rosemary.
