These are favorites not only with the youngsters, but with parents as well - under the taffy is a healthful, crisp apple.

Servings: 12

Ingredients

12 firm red apples

Wooden skewers

3 cups granulated sugar

1/2 cup corn syrup

2/3 cup water

Few grains salt

1/2 tsp. vanilla

Red food coloring

Chopped nuts (optional)

Method

Wash and completely dry the apples. Spear on the skewers.

Combine sugar, corn syrup, water and salt and stir over heat until the sugar dissolves. Heat until boiling. Cover and cook gently for a few minutes to wash down any crystals from sides of the pan.

Uncover and cook until a few drops of the syrup form threads like spun glass when dropped into cold water (temperature of syrup 290 F).

Quickly add vanilla and coloring and remove from heat.

Set over hot water to prevent hardening.

Dip apples one by one in the candy, remove quickly and allow excess candy to drain off. Twirl to coat evenly, and if desired, dip bottoms in nuts.

Cool, skewers up, on buttered pans.
