In case you haven't made a root beer float lately, I highly recommend it. I'd forgotten how fun it is to combine bubbly pop and smooth ice cream to create the effervescent foam that you can scoop and eat with the spoon end of your straw. Once you've reacquainted yourself with the classic version, move on to making the Popsicle alternative. You can use Popsicle moulds, but I think smaller is better – Dixie cups create a perfect size treat. And you can always eat three.

Root beer

Vanilla bean ice cream

1 lime

Method

Make room in your freezer for the height and amount of float-sicles you are making. I put mine into a Tupperware base for stability before freezing.

Fill a paper Dixie cup (or use a 3 oz/90ml Popsicle moulds) about 1/3 full with your favourite root beer. Add a small scoop of vanilla bean ice cream – enough so the root beer is about 2/3 up the cup to allow for some foaming. Top up the cup with a drizzle of root beer when foam goes down, but remember that the float-sicles will expand when frozen, so leave head room.

Slice a lime to get a few slim wheels. Push a Popsicle stick through the middle and stand up in the Dixie cups. The lime holds the Popsicle sticks straight before the Popsicles freeze (and it looks and tastes great when eating). Put into the freezer overnight. Twist gently to remove from the cups.
