The chefs on the Rocky Mountaineer make a tasty wild mushroom crusted chicken.Gloria Nieto/The Globe and Mail

Our grandson is fascinated by everything about trains and we thought it would be a wonderful gift to to take him through the Rockies on the Rocky Mountaineer. But we didn't realize it would be a gift for us as well.

It was a spectacular daylight journey in our domed car, twisting through spiral tunnels and over bridges. The train wended its way through fields of wildflowers and tiny settlements, and sometimes it seemed glued to the side of the mountain. We saw moose, deer and fabulous birds.

And as a great diversion, they fed us constantly. I was surprised by the high quality of the food (everything is sourced from B.C. and Alberta), particularly when you see the tiny galley kitchen where it is prepared.

The following recipes are adapted from that kitchen's cookbook, Eat Play Love: Regionally Inspired Cuisine by Rocky Mountaineer.
