This is superripe, which is more or less par for the course when it comes to the primitivo grape in sunny southern Puglia. But if you’re fond of sweet-sticky basting sauces on ribs or other barbecued meats or even dark-glazed, spicy tofu, Pietra Pura’s Mandus could be a fine complement. It’s very smooth and comes across like chocolate sauce over raisins and plums, with a dusting of baking spices and hint of tobacco. Available in Ontario.
