This new beer, the fourth in Muskoka Brewery's limited-edition Moonlight Kettle series, shines the spotlight on a single hop variety (versus a mélange often used in craft brews). The hop's name is mosaic, a particularly complex bittering agent that delivers a pronounced tropical-fruit character along with classic hoppy notes of pine and citrus. If you're an ardent brewhound, you might consider it an education – analogous to sussing out the qualities of a single grape versus a wine blended from several varieties. Or you can just enjoy it. Smartly crafted, Muskoka's Mosaic Single Hop is built on the American pale ale style, with firm bitterness and fine balance between luscious fruit and aromatic earthiness. Imagine munching on ripe mangoes in a pine forest carpeted with dried grass. Rich-gold in colour and light-medium-bodied, it weighs in at a moderate 4.7-per-cent alcohol, a full-flavoured brew that's refreshingly easy to drink. Available at the brewery (in Bracebridge, Ont.) and later this month at LCBO stores in Ontario.
