Avocado goes well with both grapefruit and strawberries. If you have a fairly firm avocado, consider tossing the slices with the fruit. If the avocado is medium firm or soft, I suggest you serve it with the slices fanned on the side.

1 pink grapefruit, peeled and sectioned

1 cup sliced strawberries

2 tablespoons maple syrup

2 tablespoons freshly squeezed lime juice

1 medium-firm avocado, peeled, pitted and sliced

fresh mint leaves, as garnish

In a medium sized bowl, combine grapefruit and strawberries.

In a small bowl, whisk together maple syrup and lime juice.

Drizzle dressing over fruit, cover and refrigerate for 2 hours before serving to allow flavours to blend.

Garnish with avocado slices and fresh mint.

Serves 4.

Per 1 cup serving: 154 calories, 2 grams protein, 8 g total fat (1 g saturated fat), 23 g carbohydrate, 1 g fibre, 0 milligrams cholesterol, 7 mg sodium

Excellent source of monounsaturated fat, vitamin C and vitamin E.
