2007 Andrew Peller Signature Series Riesling Icewine VQA ($70)
Fermented at cool temperatures and aged in stainless steel tanks, this gorgeous elixir was engineered for maximum fruit concentration. And those honeyed apricot and peach-preserve notes make it a wonderful dessert wine, either on its own or paired with a fruit-based dessert. But bear in mind that it also pairs well with spicy dishes, pate, hard cheeses and unabashed declarations of love.

2006 Inniskillin Wines Vidal Icewine Commemorative Edition VQA ($59.95)
Inniskillin put Canada on the world wine map when the vintner won a prestigious international award two decades ago. It's still going strong with this lovely icewine made in honour of the 2010 Vancouver Games. The label was designed by Canadian artist Gordon Halloran. The wine is a collectible in every sense, and will age gracefully for two decades or more. Hints of peach jam, pears and tangerines make a nice pairing with sauteed foie gras, apricot cobbler and apres ski chats.
