Five chefs offer recipes from around the globe to help you stay cool

After 16 years living in B.C.’s Okanagan Valley, I can’t say I’ve acclimatized to the dry, wildfire-prone summers that can soar to temperatures above 40 C. I’ve learned to reach for jaljeera, a savoury Indian version of lemonade, laced with mint and cumin, during heatwaves. The drink not only acts as a digestive, but also helps to cool and rehydrate the body.

Many cultures have their own beverages to help you stay cool, without alcohol. We asked five chefs from around the globe to give us a taste of what they’re sipping on all summer long.
